Sorry more questions about XP.  I've read here that XP is great but you have
to put it on a diet to get rid of a bunch of stuff it runs in the
background.  What are they and how do you turn them off?

But also, get rid of all that stupid skinning crap, and all those fading
menu effects and that.

It's not so bad once you get it set up all nice. I'm still not sure I
prefer it over 2000 though.

Not really, if you have a decent speed modern system, it should run it
great.
I would recommend disabling indexing service, unless you do a lot of word
phrase searching I doubt you would miss it.
If it seems to be a little slow for you, you can start disabling things like
fading menus, go back to classic view, etc.

I have an Athlon XP2400+ on an Nforce2 mb, and have only indexing service
turned off, and my system runs very fast with XP Professional.

go back to win2k, the only reason to run xp is if u have a laptop, because
it boots real fast.

I would go along with the general sentiment of it. W2K is a lot more
stable for me than XP.
